What a fabulous meal! I've always been curious about absinthe after having studied many French artists and it seemed to have been the drink of choice. It's very hard for me to pass on oysters on the half shell. They are SO good, but looks like quite expensive! I remember paying $3.50/dozen when I lived in Louisiana, but those were the days weren't they? :) The potato scaled char looks quite interesting!
