A Different Kind of Baklava

In theory, I love baklava.

But in practice, sometimes not so much.

After all, I can’t resist crisp, buttery phyllo pastry layers with crunchy nuts. However, more times than not, it’s just too darn sweet for me.

Sherif Badawy thought the same when he immigrated to the United States from Egypt in 2011, and found what passed for baklava here too doughy and too drenched in syrup for his taste.

So, the pediatrician and marathon runner set out to create a baklava that was less saccharine yet still delicious and satisfying.

The result is Dar Baklava, his Chicago company that makes baklava packaged in bite-size pieces that boasts more nuts and less syrup.

In fact, he says, his baklava has only 4 to 5 percent syrup as compared to other baklava that can be as high as 50 percent syrup.

I had a chance to try samples of his baklava, which are made with flour, ghee, pure cane sugar, milk, nuts, and seeds.

They come in 1.76-ounce packages of four pieces or more that comprise one serving. Depending upon the variety, one serving has 210- to 270 calories. about 15 to 17 grams total fat, 15 to 27 grams total carbs (of which 5 to 11 grams are total sugars), 5 grams protein and no sodium.

The company’s motto is: “No sticky fingers.” Indeed, you can pick up these pieces without needing a Wet One afterward.

A one- or two-bite wonder, the Walnut Baklava is features crispy phyllo rolled up around walnuts, with the pastry a thin shell so that the walnuts really shine front and center with their delicious toasty taste.

The Kunafa Pistachio has a hint of rose with a big filling of pistachios. The Cashew Bird’s Nest are tiny nests of golden phyllo strands wound together into a bowl shape to cradle whole cashews.

The Sesame Crackers with Pistachios are thin, round crackers enveloped in sesame seeds. They are very crunchy and toasting tasting, reminiscent of skinny Chinese sesame cookies in taste.

The crackers were the least sweet of the products that I tried. However, all of the baklava products were noticeably much less cloying tasting than baklava I’ve had in the past. I also like that they come portioned within each package, because just one little piece can easily satisfy when you’re craving something sweet ate the end of a meal.
